Choice Hotels International / Cambria Suites

Choice Hotels International retained VSAG to develop the menu, recipes, brand-related service systems, and operational systems for the food and beverage operation of Cambria Suites. A “soup to nuts” engagement, VSAG has ongoing responsibility for creating and evolving the full menu, recipes, kitchen operations procedures and the entire operational manual and operating system for the concept. In addition to development and support, VSAG operators were on the ground at each the openings to ensure smooth operations.

The transformation of Cambria Suites included such innovations as chef-crafted sandwiches, salads, and a selection of organic soups as well as a full-service bar, Wolfgang Puck barista bar, and chef-selected buffet menus. The result: a hotel where the guests can truly relax, and take comfort knowing that the food they eat will be real, delicious, and available 24 hours a day.

Silver Diner

Firehook Bakery and Coffee House

Transformation of Firehook Bakery and Coffee House’s merchandise and retail space included expertly merchandised shelves and counter space as well as a documented system including photographs and schematics and daily responsibility lists to ensure the Client could maintain the new look and display method.

The BreadLine

Through a comprehensive Management Contract, VSAG was responsible for the entire operation of this incredible restaurant and wholesale bakery located one block from the White House in Washington, D.C. The owner of The Breadline remained at arm’s length while VSAG took full responsibility of the entire operation and results. Due to The BreadLine's dramatically improved cash flow from VSAG’s operations impact, the owner was in a position to finally sell the business for a high value.


Houston Rockets / Toyota Center

This world-class organization enlisted the services of VSAG to ensure the caliber and efficiency of food service concessions and restaurants.

Dish

VSAG developed the prototype, financials, project timeline and resource requirements for an over-the-top fresh food market and bistro concept, the dream concept of Mr. Derek Crabb. After fully capitalizing the project, Mr. Crabb comprehensively engaged VSAG as the consulting developer, project manager, and operational consultant, an arrangement which included extensive development of operating systems, culinary systems, menus and recipes for the entire concept. Dish features over 1,000 recipes and includes a full-service scratch bakery, full-service restaurant, and multi-station gourmet market. Founder Derek Crabb has participated in many tastings and showings with the VSAG culinary team and can speak directly to VSAG's project management skills and culinary operations abilities. The first Dish opened in August, 2007 in Scottsdale, AZ, on a 12,500 sq.ft pad-site located directly on Scottsdale Road.

Chocolata

VSAG provided concept development, project management and management company services to Chocolata, a venture capital-funded concept. Chocolata can be described as a delicious, tantalizing and addictive convergence of several ideas: a from-scratch chocolate and ice shop, a coffee bar, a wine bar and a dessert restaurant. VSAG was involved in the concept since inception. Chocolata has one unit operating, three locations in the pipeline and is on target to open multiple units in Texas and plans to expand nationally.

Cooppie’s

Cooppie’s is American scratch cooking at its best: a wholesome environment where every ingredient is identifiable and the cooking makes Grandma proud. VSAG is the project manager and management company for this concept development and growth project. Since inception, VSAG has directed the brand development and prototype concept and is responsible for hiring and training the operating team. In addition, VSAG has developed the menus, systems and operating material.
