Repositioning F&B Operations Within a Luxury Brand Property
As one of Miami’s premier resort destinations offering luxury accommodations for its guests and residents, the Viceroy Miami was in need of refined food & beverage management and offerings at various outlets, while concurrently streamlining the overall brand image to be seen as an upscale year-round dining and bar destination.
Our multi-layered team approach included preparation of a full evaluation of the client’s existing financial controls and management strengths, including an in-depth analysis of areas in need of improvement and recommended action for substantial change.
Our culinary and bar consultants worked closely with the client to streamline, update, and enhance food & beverage menu concepts in a way that more appropriately fit within the hotel’s existing restaurant and overall brand.
Throughout the transitional period, we provided ongoing leadership and real-time support of the client’s front of house and back office teams. In addition, we were available to troubleshoot, offer feedback, comments, and provide modification or refinement in implementation.
