Choice Hotels International retained us to develop the menu design, recipes, brand-related service systems, and operational systems for the food & beverage operation of Cambria Suites.
A “soup to nuts” engagement, we were responsible for creating and evolving the full menu, recipes, developing a hospitality design plan, kitchen operations procedures, and the entire operational manual and operating system for the concept. In addition to development and support, our operators attended each opening to ensure success.
The transformation of Cambria Suites included such innovations as: chef-crafted sandwiches, salads, and organic soups, as well as a full-service bar, Wolfgang Puck barista bar, and specialized, chef-selected buffet menus.
